“The sea brings with it our famous pickled mackerel, octopus risotto and baby cuttle fish, cooked in their own ink”.

This is a city for whom the presence of the sea is intrinsic; for centuries the waters have brought with them fish from which Lagos has created its regional specialities: - pickled mackerel (carapaus), fried moray eel, grilled octopus, sea-snail and bean casserole, fish stew cooked in a ‘cataplana’, or baby cuttle fish, cooked in its own ink.

These are just some of the many skilfully prepared dishes to be found in any of the city’s restaurants. It’s one of the delights of summer, pavement restaurants bursting to the seams with tourists enjoying grilled, freshly caught fish.

But Lagos’ gastronomic heritage is multi-faceted, with a number of distinctly country dishes. Try Chicken Cabidela with potatoes, chick-pea casserole served with rice, or the famous moorish ‘porridge’, made with maize flour, flavoured with local sausages and pork.

Our sweets made from almonds and figs – famous throughout the Algarve – are decoratively moulded by the confectioners of Lagos.
In their hands these become true works of art :-‘morgados’, almond kisses, ‘arrepiados’, ‘Don Rodrigos’, not forgetting those famous, delicate confections which are perfect miniatures of fruits, flowers and animals.
These little gems add their own particular colour to the sweets found in the city and each year a Confectionery Fair & competition provides the opportunity not just to try these delicious sweetmeats but ensures that an important Algarve tradition carries on.

Pickled Mackerel Pickled Mackerel – ‘Carapaus Alimados’
1kg of mackerel.
4 cloves of garlic.
Olive Oil.
Coarse grain salt to taste..
Clean the mackerel, remove the heads, wash and place in a colander. Sprinkle generously with coarse grain salt. Next day, squeeze out any excess salt remaining and bring to the boil in a pan. Cook for 5 minutes. Drain and cover with cold water. Remove the skin and clean thoroughly – the process known as ‘alimar’, from which this typical Algarve dish gets its name.
Serve with boiled potatoes and season with garlic, olive oil and vinegar. In summer ‘carapaus alimados’ are often served with sliced tomatoes and onions, olive oil, vinegar and seasoned with oregano.

These fresh egg-based sweets, are very delicate to make and take a lot of skill.

Butter a baking tray and spoon tiny portions of
'Fios de Ovos' onto it, making an indentation in the centre. (Sieve egg mix, delicately made from egg yolks, sugar syrup and sugar) Boil in sugar syrup for about 5 minutes, until they become golden. Allow them to cool and sprinkle with cinnamon. Placed on grease-proof paper and wrap in brightly coloured tinfoil when cool.

The story goes that these traditional sweetmeats originally came from Lagos right up until the earthquake of 1755 destroyed the centre of the town. The then Governor of Praca, Rodrigo, was a nobleman who helped the wounded, most notably the Carmelite Brethren of the Convent of Our Lady of Carmo. In grateful thanks, the brethren dedicated the sweetmeats to the governor, naming them ‘Don Rodrigo’.
